Spring Chicken Dinner

This blog is sort of turning into an update as to what we eat for dinner! This one we have to share though, it was great. I saw the chicken recipe on 30 Minute Meals. Pound the chicken breast super thin, season it with salt and pepper, layer a piece of prosciutto or ham, a slice of provolone and then lay 3 or 4 asparagus spears across and roll them up. Coat the bottom of a pan with olive oil, heat to medium and lay the chicken in seam side down. Cook the chicken 4-5 minutes per side and remove from the pan. For the sauce add 2 Tbsp each of butter and flour then stir in 1 cup chicken stock and 1 Tbsp Dijon. Stir while scraping the good stuff off the bottom of the pan. Remove from heat add zest and juice from 1/2 a lemon and sprinkle with parsley. It was really good. We used deli ham and it was little thick and a little salty, next time we'll definitely use prosciutto or shaved smoked ham. As far as the potatoes, we went to a pool BBQ Saturday and were served these delicious baked potatoes. She sliced a potato in half, lightly covered it with olive oil cooking spray and salt and pepper and baked them for about 30 min on a high temp, about 475. She served these with a sour cream, green onion, dill and garlic sauce. We made this sauce (with low fat sour cream) and I'm proud to say we used green onions from our garden! The meal was delicious!

  2. I can't take all of the credit, Matt and I make dinner together. I usually find the recipes and then we cook together. It's fun, we are learning to help eachother pay a little more attention.

  3. BTW, that is the ham in middle of the chicken, it's cooked. Trust me!
