How do I post a link?

Spring Chicken Dinner
This blog is sort of turning into an update as to what we eat for dinner! This one we have to share though, it was great. I saw the chicken recipe on 30 Minute Meals.
Pound the chicken breast super thin, season it with salt and pepper, layer a piece of prosciutto or ham, a slice of provolone and then lay 3 or 4 asparagus spears across and roll them up. Coat the bottom of a pan with olive oil, heat to medium and lay the chicken in seam side down. Cook the chicken 4-5 minutes per side and remove from the pan. For the sauce add 2 Tbsp each of butter and flour then stir in 1 cup chicken stock and 1 Tbsp Dijon. Stir while scraping the good stuff off the bottom of the pan. Remove from heat add zest and juice from 1/2 a lemon and sprinkle with parsley. It was really good. We used deli ham and it was little thick and a little salty, next time we'll definitely use prosciutto or shaved smoked ham.
As far as the potatoes, we went to a pool BBQ Saturday and were served these delicious baked potatoes. She sliced a potato in half, lightly covered it with olive oil cooking spray and salt and pepper and baked them for about 30 min on a high temp, about 475. She served these with a sour cream, green onion, dill and garlic sauce. We made this sauce (with low fat sour cream) and I'm proud to say we used green onions from our garden! The meal was delicious!

Lemonade
Wow, when life gives you lemons you make lemonade right? Well, lemonade gives me heartburn so we'll see how this goes!
We're remaining positive and hopeful. We are actually kind of excited to see what this next chapter will bring. I got laid of when I was pregnant with Maisy and now Matt with this litle peanut. Strange.
We are so grateful to have the family that we do and it gives us faith to know we're going to be fine. Thanks for thoughts. Love you all!

Happy Birthday Ty!
To celebrate Ty's birthday we went to see a movie and tried some new recipes for dinner.
We went and saw the movie UP. It was cute, Maisy got a little scared a couple of times but liked the balloons and dogs. I must be getting old because I could barely stand how LOUD it was! The dogs in the movie were hilarious, Matt's face turned red from giggling so hard (one of my favorite things in the world!)
For dinner we made gruyer potatoes gratin, sauteed vegetables and grilled hamburgers. We found a good recipe on allrecipes.com for the burgers. They had onion mix, basil, oregano, parsley, rosemary, chopped onions and chedder mixed in. They were very flavorful. I think Ty would have given the meal a thumbs up. As you can see Maisy got meatballs, cheese and edamame, still her favorite!

Tofu
I have always found the idea of cooking tofu a bit intimidating and it turns out I was right to think so. I bought some firm tofu, cubed it, floured it and fried it up and served with veggies on brown rice. This took a long time and made a huge mess. The stir fry turned out pretty good. I added carrots, red and green peppers, mushrooms, soy beans, onions, broccoli and zucchini so hopefully all those veggies made up for the fact that the tofu was fried! It turned out ok, probably won't do it again though. I am about to eat a tortilla with cheese (my favorite) because I am hungry again!

Vinegar
You might be wondering why I have a link to vinegar tips on here??? I know, it's weird. Vinegar is great, it can do almost anything! It's cheap and it is earth friendly which are 2 of my favorite things. Just this afternoon I deodorized my garbage disposal, killed some weeds, made salad dressing and detoured some ants from Bodhi's food. I love it!

Obsess much?
Our Garden
Here is our first garden. We planted pumpkins, corn, onions, carrots, and potatoes. So far the corn, potatoes, and onions are coming up. We are shocked that anything has sprouted! This area is usually where Bodhi turns around while running like a mad man. It's been fun, though I really don't enjoy weeding and being so close to those yucky earth worms. Eew.

Fancy Grilled Cheese
My mom gave us a Grilled Cheese cookbook for Christmas and we tried a new recipe from it, it was delicious! It's called Harry's Bar Special, it was basically a fancy grilled cheese.
It is shredded Gruyere cheese mixed with small pieces of smoked ham, a few dashes of Worcestershire sauce, a generous pinch of ground mustard and a splash of cream to hold it together. Put that mixture on a piece of dense white bread that has been cut into strips and then grill 'em up! The Gruyere was a bit pricey, but worth it. Regular Swiss might be just as good. I should have taken a picture, but we ate it too fast!
